CRAB CAKES WITH AIOLI
Ingredients -serves 6 125g brown crab meat 125gwhite crab meat 225g white fish 100g white bread crumbs 1 egg, beaten 2 spring onions, trimmed and chopped Juice of ½ a lime plus the zest 1tbs fresh chopped coriander or parsley 1tsp grated ginger Sea salt and black pepper Vegetable oil for frying Aioli- 4tbs mayonnaise 1 anchovy soaked in milk 1 clove garlic, peeled and grated A squeeze lemon juice Garnish- Mixed leaves Lime wedges
Place all the ingredients for the crab cakes in a food processor, blend until the mixture binds. Shape into small patties and fry in a little vegetable oil over a medium heat until golden on both sides. For the aioli simply mash up the anchovy, add to the mayonnaise together with the other ingredients and mix well. Serve the crab cakes- Place on a serving plate, top with a little aioli, garnish with some mixed salad leaves and lime wedges.
